From garden to plate

This evening we met with Mara and Carlotta who work at Public Works and will soon be running a cafe linked to R-Urban Wick. The stove will run with the gas produced from the anaerobic digester, and ingredients will be harvested from the Mobile City Garden.

Mara showed us how best to pick lettuce leaves, beetroots and edible marigolds for the salads. We then helped put together our super seasonal meal for 25 people – pumpkin soup, beetroot salad and yoghurt marigold dip.

It felt good to know that the food and energy had come from the site, with any waste later being fed into the anaerobic digester to produce fertiliser for the garden plants and gas for the kitchen.

Sustainable and delicious.
